Local Organic Greens
Restaurant kitchens have rediscovered the vast world of edible greens and are now offering a wide variety of these healthful and flavorful vegetables on menus year round. The choices are many from mild greens like Mache to more familiar greens like Chards and Spinach, spicy greens like Arugula, mixed Braising Greens, strongly flavored Broccoli Raab and old fashioned Mustard and Collard Greens.
Shorter days and a few leaves turning color on trees suggests that it is time to make seasonal menu changes and this sort of change usually involves any number of varieties of winter squash.
Winter squash is distinguished from summer squash by the hard outside 'rind', dense flesh and the ability to store the squash for several months after harvest. Though many varieties of winter squash are available year round, the true season is October through March.
Decorative Fall Produce
Gourds, Indian Corn, Mini Orange Pumpkins, Mini White Pumpkins, and Wee Be Little Pumpkins, available by the case. An Autumn Mix case of all items available as well, from local grower Dave Vierra of Vierra Farms and Dave's Pumpkin Patch.
Each season has a dominant fruit or vegetable-citrus in winter, asparagus in spring and tomato in summer-and there is certainly no other item more closely associated with fall than pumpkins. Large, orange, hard skinned orbs that are used for both decorative and culinary purposes-what could be more classic American than brightly lit jack-o-lanterns or sweet pumpkin pies.
As the weather gets cooler and the days become shorter, words like "braised", "slow-roasted", & "caramelized" start returning to a chef's vocabulary. Below is a timeline to help you prepare for your fall menu changes.
