A Look Ahead Toward Spring
Now that Valentine's Day of 2012 is in the history books, its time to start thinking about spring menu changes. The most current local crop is Spring/Green garlic From Riverdog Farm. Harvested for its sweet, aromatic, delicate flavor, the entire plant is edible and can be used in any preparation calling for garlic. The tender pale green stalks are great for infusing a sweet garlic flavor into soups, stocks, poaching liquids and broths. Spring garlic also blends well with other vegetables, makes great purees and sauces, and is a great addition to pasta fillings and risottos.
Fresh Hand Made Pastas
Produce Express is excited to announce a line of fresh, hand -made pasta from Venezia Bakery. Venezia Bakery, located on Fruitridge Road in Sacramento, is owned and operated by Raul Soto. Along with Raul's staff of veteran pasta makers, Venezia Bakery produces five different types of hand-cut pasta including Pappardelle, Fettuccine, Tagliatelle, Tagliarini, and Angel Hair. They produce all of them in an assortment of flavors including plain, garlic, rosemary, black pepper, spinach and saffron. Pasta sheets are also available in full or half pan sizes. Please order the pasta by 4pm for next day delivery. We will deliver fresh pasta Tuesday through Saturday.
The pasta is packed in a clear plastic box with 6-3oz portions. Please specify how many boxes, which cut and flavor you would like when placing your order

Hedgehog Mushrooms
Closely related to a Golden Chanterelle, Hedgehog mushrooms are similar to Chanterelles in appearance, taste and smell. The distinct difference is that Hedgehog mushrooms are covered in spines or “teeth”, on their underside, resembling a Hedgehog.
Mushrooms are a huge group of edible fungi that are grown, picked and eaten in almost every country around the world. Mushrooms come to us as cultivated, grown in some manner by man, or, as wild, originating in wooded forests.
Interestingly enough, cultivated mushrooms do not grow in the wild and wild mushrooms have yet to be successfully cultivated by man.

Totally Tuber...Dude!
This week we focus on tubers. Tubers tend to be very starchy, and they are also typically rich in vitamins and minerals. This makes them an excellent addition to the human diet, which may explain why tubers have become so important in many regional cuisines. Tubers can also be prepared in a wide variety of ways, and flavored with an array of spices, making them extremely flexible additions to the kitchen. The best example of a tuber is the potato which we have all used in a number of applications. Riverdog Farm offers a variety of excellent potatoes from their organic farm located in Yolo County, just 50 miles from our warehouse. Riverdog produce is 'picked to order' and delivered to our warehouse 2-3 times per week.
