Scamorza (Smoked) - Fiscalini Cheese Co.

Description

Scamorza is an Italian, semi-soft white cheese with a texture comparable to that of a firm, dry Mozzarella. It is shaped like a little round ball tied at the top. The cheese is made from pasteurized cow's milk. At the end of the cheese making process, the cheese is tied and hung by string to ripen for about two weeks, then smoked over flaming straw for around 10 to 15 minutes which adds a subtle, smoky flavor with a sweet, light caramel note. The texture of Scamorza is elastic, stringy and has less moisture than Mozzarella. In addition, the flavor is more piquant, milky and creamy.

Applications/Techniques

Our Smoked Scamorza is an extraordinary culinary delight! Use as a substitute for Mozzarella, it will impart more interest in the recipe. Smoked Scamorza has excellent melting qualities which makes it great for flavoring baked dishes and for griddling. Try using it on a pancetta pizza or pasta dish.

History

The process of ripening the cheese has given Scamorza its name, which in southern Italy means 'beheaded'. Produce Express offers Smoked Scamorza from Fiscalini Farmstead Cheese Company, a fourth generation ran farmstead in Modesto.
