Fingerling Purple Potato

Fingerling Purple Potato


They don't taste much different from regular fingerling potatoes but they are beautiful to work with. They can be cooked like any other potato more or less, although they will lose some of their original color once cooked.


If cooking in water, leave the skins on to prevent water-logging and to prevent the color from leaking out. If you want to make little blue potato chips, just make sure they are fried slowly at a low temperature otherwise they will brown too much.
