Sunburst squash are a heritage variety of summer squash related to the pattypan squash. The sunburst varietal is short and round, with slightly scalloped edges and a characteristic sunny-orange-yellow color. Use sunburst squash in any recipe that calls for summer squash.
Sunburst is best in flavor when still on the small side and may be served whole when roasted or sliced for sauté, excellent as part of a summer vegetable ragout, succotash or medley.
